Chickpea and Pickled-mussel Hummus
Prepare healthy, nutritious and flavor-combining snacks that will enthral those who try it. Get started with this chickpea hummus that sets itself apart thanks to its texture, as well as its attractive mussel flavor. This recipe was created to commemorate Palacio de Oriente’s participation in the Dubai Expo.
Elaboration
Before we begin getting hands on with this recipe, we need to have previously prepared one of the main ingredients. We mean cooking the chickpeas. If you do it in a pressure cooker, it will take you between 20 and 25 minutes. If you choose a traditional pot instead, the cooking time will be between an hour and an hour and thirty minutes. Remember to leave the chickpeas soaking in water the night before, since this legume needs to hydrate during 8 and 12 hours. Watch that they have abundant water and are well beneath the surface to begin with.
The recipe starts by opening the can of mussels and placing them in the blender’s pitcher or container. Don’t forget to add the pickled sauce that accompanies them as covering liquid as well.
Next, add the cooked and cleaned chickpeas. Add the broth you used when cooking the legumes too. You can do this little by little until you achieve your preferred consistency.
It is time to blend it all into a compact paste and with your preferred consistency for hummus.
Peel the garlic cloves, split them in half and add them to the blender, alongside the peeled pistachios.
Afterwards, you should squeeze the lemon or lime, and add the juice to the previous mixture, incorporating the small cilantro branch as well.
Continue adding ingredients to achieve the potency and flavor that is expected of a chickpea and mussel hummus. Now it is the turn of the tahini, or sesame paste, the paprika, the ground black pepper, the ground cumin, the extra virgin olive oil and the salt.
Once all the elements have joined in, you should blend it all again.
Sample the resulting mussel and chickpea hummus, and add salt to taste, if necessary.
It is also a good moment to give this snack your personal touch, by adding a pinch more of one of the spices.
Finish by blending it all again, achieving that thick creamy texture hummus is known for.
Place it in the refrigerator until right before serving the dish.
Serving
- Place the hummus in a bowl and set two mussels per diner in the center.
- Round off the dish with a small dash of olive oil, and decorate it with small cilantro branches and chopped pistachios.
- Accompany this delicious hummus with vegetable crudités, breadsticks or crispy wheat triangles. All ready to enjoy some exquisite snacking!
