Creamy Pickled-mussel Soup with Albacore Tuna
It’s time to combine the excellence of Palacio de Oriente’s canned products in the same recipe with the flavor of the sea. A delicious, creamy pickled-mussel soup, boosted by the touch of pickled marinade, and finished off with a piece of albacore.
Elaboration
This recipe is easy to prepare, but the key part is serving it nicely on the plate.
Start by chopping the sweet onions and the shallots into small pieces. Use a julienne cut technique to speed up the process.
Place a pan on the stove and pour a dash of olive oil. Once it has heated, poach the onions and the shallots at a low temperature. Stir them every now and then so that they don’t get stuck to the pan. Watch that both the onions and the shallots stay soft, and not golden.
Once poached, add the canned pickled mussels and leave the mixture on the stove for a few minutes. This way, the sautéed ingredients will absorb the flavor from the mussels and the strong pickled sauce that accompanies them.
Now you can add the liquid cooking cream, mixing it with the rest of the ingredients. Let all the flavors come together during a few minutes.
The moment has arrived to take this dish from the pan to the blender. Before that though, you will need to salt to taste, and add a little dill.
After spending some time with the mixture beneath the blades of the blender, you will achieve a soft emulsion, with the perfect texture for a creamy mussel soup.
If you are looking for greater softness in the final dish, both in texture and flavor, you can add 20 ml more of liquid cooking cream. This dairy basis will result in a creamier soup, and will highlight the pickled touch.
Once the mixture has the desired consistency and is salted to taste, put it aside until it is the moment to serve.
Now we need to open the cans of albacore in pickled sauce made with olive oil, and choose the albacore pieces that are the most compacted.
Serving
- Use a serving metal ring, filling it with the creamy mussel soup that you just prepared. This accessory will help you serve it in a round shape.
- Then you can place the lemon pearls, alternating them with the Sherry vinegar pearls around the creamy soup. As well as making it more appealing, and improving the dish’s overall aesthetic, these culinary details highlight the recipe’s flavors, since they add freshness and a touch of citrus.
- Finish off this delicious starter’s assembly by placing a piece of albacore and a mussel on top of the creamy soup. If you have dill, display a small branch on top of it all to give the end result a dash of green.
