Organic Cantabrian-Sea anchovy and albacore ‘gildas’
Colorful and always well received. That is our ‘gilda’ made with albacore and Cantabrian-Sea organic anchovy; a healthy and tasty bite. It is so easy to prepare that mistakes are impossible, even if you are not particularly at home in the kitchen!
Elaboration
Skewer onto the toothpicks, in the following order, a Cantabrian-Sea anchovy, an olive and a piparra chili pepper.
Choose compact pieces of albacore in olive oil, and, very carefully so they don’t crumble, add them to the ingredients on the toothpicks, forming the ‘gildas’.
Lastly, place a few layers of sweet spring onion.
Now you can prepare the seasoning. Use a generous dash of smoky-flavored virgin extra olive oil and add chili, chopped cilantro, thyme, garlic, green pepper and dried tomato. Let it marinate for an hour.
Serve it by placing the ‘gildas’ in a bowl, letting them lean on the pieces of albacore meat and the sweet spring onion. Then season them to your liking.
