Squid (Dosidicus spp) is one of the most eaten cephalopods in Spain. It usually lives in deep waters and never rises to the surface. Its physical features make it a great swimmer and it is considered one of the most intelligent molluscs in the sea. Palacio de Oriente presents it in American and ink sauce.
