Pickled-Mussel Toast with Vegan Balearic Sausage

To make the toast you should cut the slice of bread to your preference. Choose a type of bread that will hold firm when all the ingredients are added on top of the toast. Two excellent options are rustic or ciabatta bread.
Butter the bread slices on one side and toast them on the griddle to make them crispy. Reserve the toast until the final preparation of the appetizer.
Now it is time to prepare the vegan Balearic sausage that will be the base of our toast. To do this, you must grind all the ingredients with the help of a food processor or blender. Start by chopping the pine nuts and garlic.
Then add the sundried or dried tomatoes, basil, cumin and EVOO. You can gradually blend the mixture and try different speeds and strengths until you get a paste with a texture similar to basil sausage.
